My mum gave me some white latex wall paint when I was at her place over Easter and I used it to do a quick paint job on the kitchen. Over the years, the wall next to the hood got a bit greasy. I cleaned it and painted it with the white latex. I learned that latex can get a bit lumpy over the years, this would have been easier if I had used fresh latex. But hey, can't resist free paint!
